My first job…sorta…

So, after making cake pops for the Vega staff, I was asked to make some for a party. A teacher asked me to make them because she thought that it would be a lot smarter to have than a big cake for a bachelorette party. The theme? Luau. I totally had no idea what I was going to do…the only thing I could think of was coconuts. So that was my plan of action. My cake pop process was delayed due to a 24 hour stomach flu/flu virus thingy that was awful. Yesterday, I began searching for no reason for ideas on how to present these besides throwing them in a basket. If I’m going to sell these, I need this to be right, right? I found this idea here…what I had been searching for:

So I went to one of my favorite craft stores, JoAnns, Hobby Lobby, Michaels because I knew they had these pails…they have had them for awhile and I didn’t need them then…I need them now. Do you think they had any? NO! So what to do, what to do…go to their dollar section and pray that they were there…nope, but I did find something I could use. Introducing my coconut looking (well…I tried to make them look that way…some say they look like bowling balls, but don’t listen to them) cake pops in a luau themed cup with brown and pink tags (wedding colors).

There ya’ have it. She hasn’t come to pick them up yet, but I will let you know if she likes them. Do you think she will?

Chicken Tortilla Soup for Crock Pot

I have become a big fan of Real Mom Kitchen. She has lots of great recipes. I thought that the summertime would be a great time to experiment with different recipes, especially Crock Pot because they take all day. So, ladies and gentlemen (if there are some out there), here is my first fav recipe for the crock pot:

Crock Pot Chicken Tortilla Soup

1 can black beans, drained
1 can corn, drained
1 can diced tomatoes (you could use Southwest style with peppers and onions or Rotel)
1 packet enchilada sauce mix (or if you can’t find this, mild taco seasoning works well too, this is what I used)
1 1/2 C water
1 can tomato sauce
1 can cream of chicken soup
2 C milk
3-4 boneless chicken breasts (I used one pkg. of chicken breast tenderloins)

In crock pot, mix the enchilada packet together with the water and tomato sauce. Add cream of chicken soup and milk and whisk together until smooth. Add chicken. Pour drained black beans, drained corn and diced tomatoes on top of that.Cook on low 6-8 hours.Before serving, take out chicken and shred or dice, then put back and stir it all together. Serve with sour cream, shredded cheddar cheese, lime, avocado, or tortilla chips. (I topped ours off with a little shredded cheese, reduced fat sour cream, and then I crumbled some tortilla chips in as well). Talk about yummy and there was plenty of leftovers for Jonathan!

So last Saturday, I was able to experience my very first scrapbook convention…we even got to meet Cricut Dan (of course he made us hold a Cricut product!)

I kinda wanted to take the hat home…kinda cool. Anyway, it was a 7 hour experience and totally worth it all!!! Can’t wait to start on all my projects Anyway, on the way home from this exciting day, Brooke and I decided that they should come over to our house to eat fajitas and watch Harry Potter and the Order of the Phoenix. During the movie, Ryan came out of the bathroom and said, “You have a problem in your bathroom”…of course, I’m thinking, “Well, what’s new…there a few things wrong in this house…” but there was a huge HORNET in our bathroom. Now, taking a lesson on how Amber got rid of her wasp the night before with the Dyson, we Brooke and Jonathan got the Dyson and prepared to attack…this was truly a Kodak moment

What the camera did not capture was Ryan halfway up the stairs and me in the dining room staying as far away as I could…we are deathly scared of hornets, wasps, or anything with a huge stinger I’m sure. Thank you, Brooke and Jonathan, for being our heroes of the evening. Harry Potter would be proud!

Monday, April 19th: This is my cutie putootie lunch box I got at Hobby Lobby with my 40% coupon!

Tuesday, April 20th: This is how we have been organizing coupons. It has already saved us so much money!

Wednesday, April 21st: I don’t know which is funnier…Jonathan’s Swine Flu mask OR that “Emergency” is misspelled.

Thursday, April 22nd: We decided to play Candy Land when I got home from school.

Friday, April 23rd: I came home to find Faith watching something on Nick Jr. I can’t remember what she said it was called, but she loves it!

Saturday, April 24th: Brooke and Ryan told us about this FABULOUS restaurant where you get unlimited meat…and the pineapple was delicious!

Sunday, April 25th: The church was PACKED today!
